Crock Pot Pulled Pork


1/3 c light brown sugar

4 t. paprika

2 t dry mustard

1 t ground cumin

kosher salt and pepper to taste

6 pound pork butt (with bone)

3 t olive oil

1 c. apple cider vinegar

1- 6 oz can of tomato paste


Combine all dry ingredients including 4 t. salt and 1 t. pepper in a small bowl.  Rinse pork butt and trim as much fat as possible. Rub the pork with most of the spice mixture.  Let rest while heating the oil in a large skillet to medium heat.  Add pork to the skillet, turning until browned on all sides, about 5-10 minutes. Remove pork and transfer to a plate; whisk 1 c water into the drippings in the skillet.  Transfer liquid to a large crock pot.  Add vinegar, tomato paste, all remaining dry ingredients and 4 c. water to the crock pot and whisk to combine. Add pork, cover and cook on low for 8 hours.

Remove pork and transfer to a large bowl. Pull pork apart with fork.  Discard bone and any remaining fat. 

Serve pork with a spicy bbq sauce, potato buns, fresh coleslaw.
